INGREDIENTS
Ash gourd (petha) : 1 kilogram
Sugar" 750 grams
Alum powder : 1 teaspoon
Lemon juice : 1 tablespoons

METHOD
Cut petha into half, remove skin and seeds and cut into pieces of desired size. Prick them with a fork or any other pointed thing. Place petha pieces in a large pan and pour sufficient water so as to just cover the pieces. Add alum powder and boil for about ten to fifteen minutes. Remove from heat, drain and wash thoroughly under running water. Combine sugar with one cup of water and heat till sugar dissolves. Add lemon juice to remove scum, if any. Reduce heat to medium and add boiled petha. Continue cooking till pethas get softened and sugar syrup is of three-thread consistency. Remove from heat, remove pethas and keep the pieces separately, so that they do not stick to each other. Serve when cool.

Preparation Time : 5-10 minutes

INGREDIENTS

Cauliflower, separated into florets : 1 medium
Green peas, shelled : 1 cup
Olive oil : 2 tablespoon
Cumin seeds : 1 teaspoon
Ginger paste : 1 teaspoon
Garlic paste : 1 teaspoon
Coriander powder : 2 teaspoon
Red chilli powder : 1/2 teaspoon
Turmeric powder : 1/2 teaspoon
Tomato puree : 1/4 cup
Salt : to taste
Garam masala : 1 teaspoon
Dry mango powder (amchur) : 1/2 teaspoon
Green chilli, slit : 1
Fresh coriander leaves, chopped : 1 tablespoon

METHOD

Heat olive oil in a kadai (wok) and add cumin seeds. When they begin to change colour add ginger paste and garlic paste. Sauté for half a minute. Add coriander powder, red chilli powder and turmeric powder. Sauté for another half a minute. Add cauliflower florets, green peas, half a cup of water and tomato puree. Add salt and mix. Cover and cook for eight to ten minutes, stirring occasionally Add garam masala powder and amchur and mix. Garnish with green chilli and coriander leaves and serve hot.

INGREDIENTS

Rohu fish : 600 grams
Salt : to taste
Lemon juice : 2 teaspoons
Oil : 2 tablespoons
Mustard seeds : 1/2 teaspoon
Curry leaves : 10
Onions, chopped : 2 medium
Ginger paste : 2 teaspoons
Garlic paste : 2 teaspoons
Green chillies, slit : 3
Turmeric powder : 1 teaspoon
Coconut milk : 1 1/2 cups

METHOD

Clean, wash and cut fish into one inch slices. Apply a little salt and lemon juice and keep aside for fifteen minutes.Heat oil in a kadai, add mustard seeds. When they splutter, add curry leaves and sauté for a few seconds. Add onions and cook until soft and translucent. Add ginger paste, garlic paste, slit green chillies, turmeric powder and fish pieces. Cook on high heat for half a minute. Add coconut milk and adjust salt. Cook covered on low heat for about ten minutes. Serve hot with steamed rice.

INGREDIENTS

Dark chocolate : 100 grams
Refined flour (maida) : 1 1/4 cups
Baking powder : 2 teaspoons
Walnuts, peeled : 1/2 cup
Butter : 130 grams
Castor sugar (caster sugar) : 1 1/4 cup
Vanilla essence : 1 teaspoon
Milk : 3/4 cup
Oil : for greasing

METHOD

Sift flour and baking powder and keep aside. Chop walnuts. Grease a round microwave dish and line it with butter paper. Combine chocolate and butter in a large microwave bowl and soften, uncovered, on Microwave HIGH (100%) for one minute. Beat in sugar, vanilla essence and blend well. Add the sifted flour and nuts and mix well. Add milk to correct the consistency of the batter. Pour the mixture into a greased bowl. Place the bowl on an upturned saucer and cook, uncovered, on Microwave HIGH (100%) for seven minutes. Allow standing time of five minutes. Insert a skewer, if it comes out clean it is done. If not, cook, uncovered, on Microwave MEDIUM (60%) for two more minutes. Place on wire rack to cool. Cut into squares and serve with tea or coffee.

METHOD

Take cubed pumpkin and apples in a panAdd orange juice, salt, bay leaf and cook on high heat. Once it comes to a boil, reduce heat, cover and simmer till completely cooked and mashed. Let the mixture cool. Remove the bay leaf and then blend to make a puree. Strain the puree and transfer into a pan. Add two cups of water and turmeric powder, mix well and bring to a boil. Adjust salt and add freshly crushed peppercorns and mix well. Reduce heat and add fresh cream. Serving piping hot garnished with coriander leaves.

For salsa

Fresh coriander leaves, chopped : 2 tablespoons
Lemon juice : 1 tablespoon
Salt : to taste
Cheese sauce
Oil : 1 tablespoon
Garlic, crushed : 5-6 cloves
White sauce : 1/2 cup
Milk : 1/4 cup
Mozzarella cheese, grated : 1 cup

METHOD
Mix ingredients for salsa sauce. Set aside in a bowl. For cheese sauce, heat oil in a pan. Add crushed garlic and sauté. Add white sauce and milk to dilute. Mix well and add grated processed or mozzarella cheese. Stir. Spread the corn chips on a serving plate. Spread a layer of baked beans. Pour cheese sauce and top it with salsa sauce. Serve the remaining salsa sauce separately in a bowl.

Potato, boiled and mashed : 6 medium

METHOD
Add salt to mashed potatoes and knead into a smooth dough. Divide into twelve equal portions.Heat one tablespoon of olive oil in a pan and sauté onion till translucent. Cool and mix with paneer, coriander leaves, cashewnuts, red chilli powder and salt. Divide the mixture into twelve equal portions. Stuff each portion of mashed potato with a portion of the paneer mixture. Roll and shape into tikkis (roundels) of approximately two-inch diameter and half-inch thickness. Heat sufficient oil in a kadai (wok) and deep-fry the tikkis till golden brown. Drain and place on absorbent paper. Serve hot with tomato ketchup or mint chutney.

Ingredients

* 4 boneless skinless chicken breasts, cut into cubes
* 3 tablespoons cornstarch
* 1 tablespoon vegetable oil
* 4 cloves garlic, minced
* 5 tablespoons low-sodium soy sauce
* 1 1/2 tablespoons white wine vinegar
* 1/4 cup water
* 1 teaspoon white sugar
* 3 green onions, sliced diagonally into 1/2 inch pieces
* 1/8 teaspoon cayenne pepper, or to taste


Directions

1. Place the chicken and cornstarch into a bag or bowl, and toss to coat. Heat oil in a wok or large skillet over medium-high heat. Fry the chicken pieces and garlic, stirring constantly until lightly browned. Stir in the soy sauce, vinegar, sugar and water. Cover, and cook until the chicken pieces are no longer pink inside, 3 to 5 minutes.
2. Stir in the green onion, and cayenne pepper, cook uncovered for about 2 more minutes. Serve over white rice.
